Who plans luxury weddings in the Texas Hill Country? Poppy Planning does, from a Dallas studio, and our Austin satellite office is where the team plans Hill Country weddings. Camp Hideaway in Fredericksburg lists 225 guests, Camp Hideaway in Gruene lists 200 and Hillside at Red Rock lists 100. This guide gives each venue’s figure, the page it came from and the day we read it, then counts the couples who marry in the five counties around them.
How Does a Dallas Studio Plan a Wedding in the Hill Country?
Our locations page names the Austin office as home base for Hill Country weddings, start-up launches and social celebrations. That matters for one practical reason. A planner who lives an hour from the property can walk the grounds, taste with the caterer and look at the parking field in the weeks before the event, instead of arriving the Thursday before.
None of the three venues below is a hotel. A hotel ballroom comes with a kitchen and restrooms. A retreat property often does not, so the caterer, the power and the chairs can all be on your order list. We start from the seat count and work backward.
How Many Couples Marry in the Hill Country, and Where Do Their Licences Come From?
Each row is one county in 2023, taken from the Texas Department of State Health Services marriage index. Two columns show licences, so you can see how many couples bought theirs in a different county.

Add up Hays, Comal, Gillespie, Kendall and Blanco and you get 5,872 marriages in 2023. Of those, 55.5 percent used a licence from another county. Dallas County recorded 12,805 marriages that year, and 38.9 percent came with an outside licence.
Look at Gillespie County, home of Fredericksburg. It recorded 561 marriages in 2023 and issued 190 licences. That means 72.2 percent of the couples bought their licence somewhere else, which tells a planner the guests are likely coming from out of town as well.
What Guest Capacity Do the Texas Hill Country Venues Publish?
These are the guest figures three Hill Country venues print on their own pages. Two are Camp Hideaway locations, in Fredericksburg and in Gruene near New Braunfels. The third is Hillside at Red Rock, outside Fredericksburg on a 20-acre property.

The labels differ. Hillside at Red Rock counts 100 seated diners in a 1,500 square foot room, and says the number falls once a dance floor goes in. Camp Hideaway gives the most its event space holds and does not say seated or standing. Ask each venue which layout its number counts before you hold a date.
Both Camp Hideaway pages also list on-site lodging, which helps when the drive back to town is long and dark. Hillside at Red Rock lists six cabins for up to 20 guests. That sleeps a wedding party, not a guest list, so you still need a room block in town.
Which Venue Fits Which Guest Count?
Each row uses the largest figure that venue prints. A venue marked No for a guest count prints a smaller number.

When Is the Weather Best for a Hill Country Wedding?
Our NOAA files have no station inside the Hill Country. The nearest is Austin-Bergstrom airport, so the table below uses it, in degrees Fahrenheit and averaged over 1991 to 2020. Use it to compare one month with another. It won’t tell you the temperature at a particular venue.

Couples here pick October. In 2022 and 2023 it held 14.4 percent of Hays County marriages and 15.1 percent of Kendall County marriages. Dallas County, at 10.8 percent, is less lopsided. The Austin station puts the October high at 82.5, with 6.5 days at 90 or above.
The catch is rain: 4.25 inches in October, behind only May at 5. Both Camp Hideaway pages describe glass doors between indoor and outdoor space, so a wet ceremony can move a few steps rather than a few miles. Summer runs the other way. August averages a high of 97, with 29.4 days at 90 or above, and Blanco County logged just 1.8 percent of its marriages in July across those two years.
Does Poppy Planning Have a Hill Country Wedding in Its Portfolio?
Not a published one. The Austin office plans Hill Country weddings, but none of our case studies is set at these three venues or anywhere else in the region. We would rather tell you that than imply a venue relationship we do not have.
What Travel Weddings Has Poppy Planning Shown?
What we can show is how a wedding runs when it leaves Dallas. The Arcangelo wedding at The Old Polo Estate in Palm Springs took a full weekend on the Everything Under the Sun package. Poppy produced the poolside welcome, the lawn ceremony and the reception.
The Gillespie wedding in Charleston used a Party Animal package. It had a rooftop welcome reception, a candlelit seated dinner and onsite coordination all weekend. A Hill Country wedding for guests flying into Austin would follow that same arc.

How many guests can Camp Hideaway in Fredericksburg hold?
Its weddings page says up to 225. The Gruene location says 200. Both leave out whether that means seated or standing, which is worth a phone call before you sign anything.
Will Hillside at Red Rock fit a 150-guest wedding?
Not in the Great Room. That room seats 100 for dinner, and the venue says fewer once there is a dance floor. For weddings it also lists up to 100 guests. At 150 you would be looking at a different property.
Which month do most Hill Country couples marry in?
October. In 2022 and 2023, Hays, Comal, Gillespie and Kendall each held between 13.8 and 15.1 percent of their marriages that month. Blanco County is the odd one, with April and October level at 14.9 percent.
Has Poppy Planning published a Hill Country wedding?
